Today is another day of familiar humid Houston weather.  It was so lovely to wake up to 65 degrees though!  I really kicked butt yesterday and got all my work done so I had nothing to do this morning before class.  That means I hit the gym for about 20 mins of elliptical, then came home and did 25 mins of ab work while watching Buffy of course.

Breakfast was used to clean out the pantry.  I microwaved some apple chunks with cinnamon and sugar, then added a packet of Cream of Wheat, topped with a dash of soy milk.  Random, but pretty tasty.

Let’s rewind to Tuesday’s dinner.  We didn’t get home until after 8, so needless to say I microwaved something.

Black bean and butternut squash burrito, Laughing Cow, carrot sticks.

This weekend I made up a couple of these with some cooked butternut squash that needed to be used asap.

Frozen Black bean and Butternut Squash burrito

2 tortillas of choice (I used whole wheat)

1 1/2 cups cooked butternut squash

1/4 cup black beans

cumin, black pepper, cinnamon

Warm tortilla so it is soft enough to fold. Smash butternut sqaush onto tortilla, sprinkle on black beans.  Add spices to taste.  Microwave 1 minute so that entire burrito is very warm and soft.  Immediately roll up and tightly wrap in plastic wrap.  Freeze.

*Wrapping in the plastic while it is still nice and warm and then immediately freezing makes the burrito keep it shape, aka not fall apart.

Tuesday night I just took one out of the freezer, microwaved about 2 mins, and spread half a Laughing cow wedge on top.  Delicious.  I love the cumin with butternut!

Alright, bloggers I need some help!  The hubby got a little bonus this year (yay!) and we will have enough after some necessary items to go on a vacay.  We need suggestions!

    Is this your first summer here in Houston? I can’t remember (sorry). I hated it the first year we moved here.. now.. I am actually loving it… lol :)

    Vacation ideas… depends on what you like to do… we are national park people… We did Yosemitte a couple years ago.. it was awesome.. you can stay at a hotel or camp… do a day hike or multi day hike. Awesome..
    Smokies in TN is also a lot of fun… hike or bike… stay in a cabin and just enjoy the beautiful mountains.. if you are a beach person… we did Hawaii one year and if planned correctly you can actually do it for cheap. We went to Bahamas a couple years ago and it was an awesome relaxing laid back vacation.

    My family has been to a lot of Club Meds since I was a kid, and it’s always a great vacation. It’s an all-inclusive that doesn’t feel super “resorty”…they’re pretty small and intimate, which is more relaxing. Last year we went to Turkoise, in Turks and Caicos, which is nice because it’s adults-only! They usually have pretty good deals, too, with packages that include airfaire.

    Last summer was my first one here. Holy Moly hot has a whole new meaning here! I won’t lie, I spent a lot of time sitting in the A/C.

    The hubby and I spent one vacation in TN and absolutely loved it! So beautiful there!
