Desk Legs Are Not Running Legs

The weather was absolutely beautiful yesterday I am told (damn you Mother Nature) so the hubby wanted to go for a run after dinner.  I decided to peel myself from my desk chair and join him.  Sitting at a desk from 7am to 7pm does not do good things to the legs.  My entire body hurt to run and my legs felt like cement blocks were attached.  I drug my exhausted self 2.21 miles and called it quits.  It looks like I will have to work my butt off to get back to where I was endurance wise.

Breakfast this morning was out of the ordinary for me (i.e. not a GM or oats).

I found this lonely english muffin in the back of the pantry and figured I should probably eat it.  I filled it in with 1/4th cup egg beaters and strawberry jam.  (Love the savory/sweet combo).  On the side I ate a few strawberries and slices of banana.  It was nice to change up breakfast but I am worried it won’t keep me full as long!

I also used a Dunkin Donuts coffee sample I received in the mail the other day.  I have never actually been to a Dunkin Donuts before.  There weren’t any where I grew up and the only ones I know of here are in real shady parts of the Loop.

Results:  It smelled pretty darn good, but I was not very impressed with taste.  I blame that on my snobby fresh ground Central Market coffee habit.  A lot of the bloggers I read swear by their iced coffee, so maybe one day.

Here is a review of my Monday:

I sat here all day.  Literally.  I was in the chair shortly after 6am and didn’t get out until our run at 7pm.  Sadly, this is pretty organized as far as my desk area goes.  (And yes, I make piles and know exactly what each one is for)

Survival kit.

Lunch.  Joseph’s Lavash wrap (you must try these!), hummus, veggies, veggies on the side, and pita chips (x about 5 more servings as snacks).

Dinner.  Cereal, strawberries, bananas, and lots of cinnamon.  Yes, I drink iced coffee with dinner.  I also had an unpictured protein cake after my run.

That is it folks.  I still have class today and tomorrow (don’t even get me started on that topic) and more to cram into my brain than humanly possible.

Fun fact: I now drink coffee like I take tequila shots:  fast and in multiples.

Texas, I love your coffee

After a quick segment from Core Fusion-Total Body Sculpt, I brewed up some joe to start off this study-week-from-hell.  Let me just say…this coffee must be magical.  The entire apartment instantly smelled of heaven.  The hubby and I ran to Central Market yesterday to restock coffee and tried a new flavor:  Taste of Texas. I may not love a lot of things about Texas, but I sure do love this coffee!

GMIAB anyone?  I cut back the liquid a bit and added some ground flax to make my green monster in a bowl this morning.  It was kind of fun.

*I apologize ahead of time for all the terrible photos this week but if you can’t tell I am eating all my meals at my desk underneath my desk light.

*I also apologize if I go MIA at some point this week and next week.  My finals start a week from today and I have one every other day.  If you don’t hear from me by 12th or so it means I didn’t survive.

Random Grocery Goods

Does anyone stop at the grocery store for one thing and come out with like 15 other random items?  Because I do, every time!

First random purchase:

Trooper treats!  Doggie ice cream!

Licking his chips just thinking about it!

Yum, Yum, Yum!  And yes, I let my dog eat ice cream for dinner.

Next random item:

Jelly Belly Cold Stone Creamery flavor mix, the strawberry blondie was by far the best flavor, with apple pie a la mode a close second!

Last random item:

Sourdough Nibblers.  Many servings were eaten last night.  Heck I actually opened the bag in the car on the way home.

Dinner was a quick quesadilla made with some of my mom’s homemade salsa:

So chunky, just the way I like it.  It was a bit too sweet for me.  Mom, did you add sugar or something?

After random snacking all last night I still woke up this morning starving!  (Probably that 5 mile run last night!)

Waffles…er, scratch that…pancakes!

Whole wheat pancake mix.  I made it according to waffle directions.

I am too impatient and didn’t let this warm enough or cook long enough, so they came out in pieces.  I decided to throw down some pancakes while I worked to fix my mess.

Success.

The extra large pancakes are for the hubby!

Yes, that pancake takes up almost the whole plate, and my hubby ate two of them!

I had one waffle and one pancake topped with cinnamon, banana, plain greek yogurt, and a little agave.  YUM!  YUM AGAIN!  These were soooo good!

While I made pancakes the hubby made some of a our new coffee.  We picked this up at the opening of One Green Street.

Now time to run some errands.  It got cold overnight!  We woke up to about 34 degrees!  And I had just packed up my boots and sweaters and put them in storage closet, time to unpack again!

Happy Hour + Iced Latte

Last night I went to the first semester happy hour at Ei8ght.  The bar had a nice atmosphere and a large patio which we enjoyed.  They also has a large selctions of drinks made at a fresh fruit bar and some good deals on wine and appetizers.  I did enjoy part of the fruit platter app at our table.  I cannot review the drinks because I am sticking to my no alcohol until post-race!

We left the bar early because I hadn’t eaten dinner yet and Trooper was lonely at home!

For dinner I had the other half of my wrap and fries from lunch!

Unpictured dessert was come vanilla yogurt with chocolate chips and half a banana.

Saturday Morning Latte

I had been craving an iced latte all week but haven’t had time to make one or swing by the coffee shop before class.  So first thing this morning I informed the hubby that I NEEDED an iced latte.  Luckily we live down the block from an awesome Coffee/Crepe sidewalk cafe, CoCos Crepes & Coffee. I ordered my latte and my husband made his own crepe.

Mmmm…vanilla iced latte with skim milk.

The hubby built his own whole wheat crepe with eggs, mushrooms, and sun dried tomato sauce.  I may have stolen a few bites!

For breakfast I had some bananas that needed to be used, so I decided on some good ol’ toaster waffles.

My favorite toaster waffle is from Central Market- they have such a nice, hearty slightly sweet grain taste!

I topped my waffles with bananas, cinnamon, and few dollops of whipped cream.  For some reason I can’t stand syrup, so I usually add a little whipped cream of yogurt on my waffles/pancakes.

We enjoyed our breakfast while watching Conan’s last episode on DVR.  Honestly, it made me a bit sad, but he handled himself well and gave a wonderful speech about being kind and respectful.

Training Schedule

Although I should be making up speed intervals from early this week, my legs are telling me to rest today-so I am taking a rest day!  I am hoping to do some stretching and ab work.

Visualizing Coffee!

I have now been at school since about 8:15 this morning. I am prepping for Secured Transactions (my last class) and hope to be home by 7:30ish!

I could really use some coffee right now! But for now, I am working on my daily water intake!
